In a large pot, bring water to boil. Season water with salt and cook macaroni for between 8-12 minutes. Drain pasta and place in a large bowl and while pasta is still hot add all the cheese. In a separate medium bowl, combine the sour cream, butter, eggs, salt, pepper, and milk and add to the macaroni mixture. Spray casserole dish with nonstick and pour macaroni mixture into the dish. Bake for 30 to 45 minutes or until golden brown. Top with additional cheese, if desired. To really add a little flair sprinkle a little Romano Cheese on top to present.
So Colin, being from Chicago has a craving every once in a while for something other than pizza. And it’s White Castle hamburgers. Using this recipe he made the most amazing burgers that he and the boys couldn’t get enough of.
White Castle Sliders
1 lb Ground Beef
1 2/3 cups Beef Broth
1 cup Minced White Onions
8 American Cheese Slices (optional)
16 Hamburger Dill Pickles
1 tsp Salt
½ tsp Pepper
½ tsp Onion Powder
2 pkgs Dinner Rolls (16 rolls)
Line a 10×15 pan with parchment paper.
Mix ground chuck, ⅔ cup beef broth and salt, pepper, and onion powder together until mixture is easily spreadable.
Gently spread meat mixture into prepared pan and form a thin even layer.
Using a knife, score each into 16 equal rectangles.
Use your finger to make 5 holes in each patty.
Place in freezer for at least 1 hour.
Remove frozen patties on parchment paper.
Preheat oven to 450.
Pour remaining beef broth (1 cup) into a baking sheet and spread minced onions over entire bottom of pan.
Allow to sit for 5 – 10 minutes.
Cut all dinner rolls in half to make buns.
Place frozen beef on top of onion mixture.
Place in oven for 10-20 minutes to allow burgers to steam cook (until they turn brown).
Remove and place cheese on each patty (if you are making cheese sliders).
Top each with a bun top and return to oven for 3 minutes.
Top each bun bottom with a dill pickle
Use a spatula to pick up each slider half and place on bun bottom.

After traveling cross country (AGAIN) with boys in tow we wanted to pass along a few tips so that you won’t be caught off guard and without something you need!
Of course if traveling with toddlers or infants you need to make sure that along with all of your diaper bag needs like wipes, change of clothes,\plastic garbage bags, etc…But a very good road trip add on is a portable changing pad. They are inexpensive and very easy to pack and store. They come in handy when you stop late at night or if you go into a bathroom that does not have a changing table inside. The changing pad also does wonders for germ-o-phoebes who like to avoid any unnecessary dirt or germs.
Games, Games, Games, It is essential to make sure the kiddos are entertained while driving to ensure your sanity as well as theirs.Printing off a road trip games list off the internet comes in handy. Make sure you pack a kids atlas and cool books (but beware of carsickness when reading). We also like to cover everything so we make sure to include, fun scavenger road trip games for everyone. These become really fun for everyone and helps to keep the driver alert! Also it’s a must for us to pack a portable DVD player and a leap pad to give our sons multiple options.
Of course you must pack snacks!!! We like to cut up slices of oranges, apples and grapes and pack individual bags of popped popcorn, pretzels and granola bars. But whatever you choose just remember that things can get really messy so don’t forget your napkins, wet cloths and hand sanitizer.
Blankets.We had to unexpectedly pull of the road in Wyoming due to a winter storm that closed I80!! Yes, this was a first for us to actually experience a major highway being closed due to bad weather. So we were forced to spend several hours at a truck stop with our car running and trust me it was a blessing that we had extra blankets with us. Blankets also come in handy for a quick pull over to stretch legs and play or a picnic.
Headphones.Trust me, these are a must have! When Ace is watching the dvd player or Kingston is playing with the leap pad, having that noised blocked out for the two in the front seat is priceless!!
Why spending quality time with everyone in the family,One on One, is so important.
Quality time with each child is crucial for a healthy family dynamic. And also encourages high self esteem. Everyone likes to shine in their own lane and many of us feel comfortable doing different things. It’s fun to know that someone takes an interest and joy out of what we like to do as well. Every child is an individual and has their own hobbies and interests, so we should also try to schedule alone time with each child. Bonding with each child separately can really help the bonding process and overall understanding of each other. I notice that Ace really enjoys creating stories, and building things with his dad. Colin even tries to take at least one day out where he and Ace can go somewhere to eat. Even if it is a fast food meal, or playing sports in the park, it is time set aside just for the two of them to bond.
Ace and I get a kick out of going to the movies together, just the two of us (We love the Avengers). No one gets in the way of a dance party Jam session with Kingston and I and we also like to read together. It is truly fun and liberating relating to them separately on this level. It brings out the kid in me and is so a cool way for me to understand my two amazing boys for who they truly are.

Volunteering to Shovel Snow.
Kudos to Ace Loftus, 5 yrs old, who decided to volunteer and help his neighborhood by shoveling the snow for our block. There are several older couples and people who work long hours who benefit from having the sidewalk free and clear of ice and snow.

Great Tips for a Stress Free Holiday Season This Year!
Take Care of your Mind, Body & Soul.
Calm yourself for at least 15 minutes of the day(more if you can, but I know how hard that can be). Treat yourself to quality time being alone and present with your innermost thoughts and happiness. If you can’t find the time to actually go to a spa or take a quick weekend vacation then you can do what I do and take time out to truly visualize doing those things or being those places in your mind. Trust me it really works! Put on your favorite cd, light your candles, close everything out and just be at peace for just 15 minutes thinking of nothing but whimsical dreams and happy thoughts.
Identify your priorities and establish boundaries.
Consider what is most important and valuable to you during the holidays and keep those as priority. This will require you to set boundaries around your priorities. Say no to “lesser” priorities, and ask for help when needed. For example, if exercising regularly is a priority, set boundaries around your time to ensure you’re able to get to the gym on a consistent basis. Similarly, if you want to spend quality time with loved ones you don’t see often, then you may have to say no to other responsibilities. This will keep you from feeling like you’re being pulled in all directions. It may also help reduce the risk of feeling resentment or disappointment once the holidays are over.
Don’t focus on all of the things that you don’t have this holiday season or what you can or can’t buy. I know this is very hard to do especially this time of year but it is so important and helpful to constantly write down all of the many things that you are grateful for instead. You will find that you are in a constant state of thanks and joy that you have no room in your heart or day to covet what you don’t have or cannot buy.
